Most who have tasted the Carlota de Limon Icebox Cake ft Marias Gamesa Cookies state that it tastes exactly like Key Lime Pie. If this is true, it is not going to be a huge seller as Key Lime Pie is a very niche dessert that not all Americans enjoy like Oreos or Cinnamon.

- I like Crumbl key lime pie so I wanted to try this one! I felt they were very similar just with a different base, key lime has graham and this one has cookies. IMO the cookies don’t add much flavor so you just get lime. I thought the layered cookies inside were a nice addition too! I felt like the filling also tasted a bit like cream cheese for those that don’t like it. I’d get it again though
- 6/10 It’s a very strong taste of lime so if you’re hoping for a more subtle flavor, this won’t be for you. I found it very strong almost like a sour flavor. It almost tastes like sour cream cheese. The cookie also got soggy after like 10 minutes of driving home so you have to eat it right away. I don’t think I would get this flavor again.

You may wonder why Crumbl Cookies has had so much success with Mexican style desserts. One of the main reasons is the Crumbl co-creator, and Cookie and Dessert calendar creator, Sawyer Hemsley did his mission trip in Mexico. This gave him an opportunity to enjoy some of the unique desserts that are available in Mexico. Tres Leches Cake is a huge seller at Crumbl and now we will see if Carlota de Limon is as popular.
In the spring of 2025 Crumbl made a major shift from repeating the same old favorite cookies and desserts to testing brand new items. One of these is the Carlota de Limon limited time offer (LTO) dessert. This dessert is described as “a zesty lime filling layered and baked with buttery cookie pieces, all decorated with a dollop of whipped cream, a fresh lime slice, and a cookie piece.”
This is going to be a very interesting dessert situation for Crumbl Cookies locations because this dessert requires a lot of prep and an extra tray and fork. These types of dessert either do incredibly well at Crumbl or they are a disaster for the employees and staff. Crumbl found success with the Tres Leches Cake limited time offer dessert so they know the population that enjoys these types of delicacies. It will be fascinating to see if this dessert makes it to the rotating menu for all Crumbl Cookies locations.
