“A fluffy & buttery cookie topped with a delicious glaze, house made raspberry jam, and a swirl of sweet buttercream frosting.
This cookie had a very nice variety of texture. I liked how the cookie had a delicate crunch & the buttercream was silky smooth. I LOVE the house made jam & it was so sweet! Gooey, soft, and melt in your mouth delicious.

Raspberry butter cake: 6/5 I lovedddd this one. I knew I was gonna like it because kbc is one of my all time favs. The raspberry jam was tart enough to cut how sweet the cookie was. Hands down loved this one but I do tend to lean towards the fruity cookies.

Here is a copycat Raspberry Butter Cake recipe for those that want to try to make them at home:
A gooey butter cake cookie brushed with a vanilla butter glaze, topped with a dollop of homemade tart berry jam, and a swirl of vanilla buttercream.
For the base I used lifestyleofafoodie.com butter cake cookie recipe & added the Kentucky Butter glaze.
Then, I added 1 cup frozen berries of choice, 3 tbsp water, 1 tbsp of lemon juice in a small saucepan and let it boil for 3 mins. Lower to simmer for 3 more minutes. Take off heat, add 1 to 2 tbsp agave syrup and 1 tbsp chia seeds. Let cool. (Add xantham gum 1/4 tsp for a thicker jam).
Frosting is 57g butter, unsalted. 120g powdered sugar. 1/2 tsp vanilla. 2tsp vanilla creamer (or milk).
